What stops a health app shipping is almost never the engineering.
It is one sentence in the description that quietly moves you from wellness to medical device. Or a declaration inside App Store Connect that Health and Fitness apps are required to answer, which exists only in the web interface, which no API returns and no automated check will catch for you.
I have shipped cycle tracking, pelvic floor training, an IBS and FODMAP tracker, and a vestibular therapy app built on real clinical protocols. The engineering was the easy part in every one of them.
This belongs on your desk rather than your team's for one reason. What you are allowed to claim decides what is worth building, and it decides it before the first sprint. A team that picks the feature set first will hand you a product whose best selling point is the sentence you are not permitted to print.
Settle what you are allowed to say before you settle what you are going to build.
